Created from the flank, a cut from the hindquarters of mature beef cows, with salt and a touch of smoke… and a lot of time in the drying room and cellar, to achieve the marbled texture and uniquely smooth flavour of our beef ham.
12-18 months in a natural drying room.
A touch of smokiness from holm oak wood.
